Aguardiente

Generally the vast majority of spirits marc depart from white grape varieties. This is the first distinctive atribute of our marc that it is made from red grapes from one of the Syrah plots in Abadía Retuerta Vineyards. The next peculiarity is that it is a distillation of wine, not of grape skins.

It is made without additives or sulfur dioxide, and also without yeast , therefore its fermentation is totally natural. The temperature at which fermentation takes that does not exceed 26 º C, and part of the process is to make daily pumping until the wine has run out of sugar.
